What's Happening???
It's Mardi Gras Carnival Time here in
Trinidad &
Tobago.
Yes, I'm carousing with the natives and enjoying the Soca and
Calypso, Pan Orchestra Music and Costume Competitions. The
Carnival
here is 5 times the size of the one in
New Orleans,
and the whole country shuts down to revel in the streets,
parks and stadiums, and enjoy the "sins of the flesh" before
the start of
Lent
on Ash Wednesday during which everyone purifies themselves
during the Passion Season. The "mas" or party season starts
right after
Christmas
and culminates on "Fat Tuesday" with an all day/night orgy
with huge parades, dances, nakedness and all manner
of nonviolent misbehavior. Even children participate.
Amazingly, as it is in
Key West,
very little criminal behavior occurs as the people have a
tradition of respecting others during this time and so
police themselves, thus no one gets hurt.
The police
keep a low profile with the firemen in their trucks
at festival locations, available if needed.
 
As I have been to
T&T several times before, I am staying with some old friends
here that own The Chateau Guillaumme B&B in Arima, a large
suburb of the capital city Port-O-Spain. It is a very nice
place, air conditioned, TV and within a few blocks of the
downtown/markets of the City. I walk downtown every day to
sample the local Caribbean food and chat with the friendly
folks, see my Dentist (I'm getting 3 molar caps:-)),
Optician (new specs) and help Mathew (my host friend) with
the shopping.
Last weekend, Mathew,
Joan and I took the car ferry to the other Island of this
Republic, Tobago. Tobago is a natural
Disneyland
for folks who like to snorkel, dive, hike rain forests and
fish for the big ones. We spent 3 days there sampling this
beautiful natural paradise that has NO industry and exists
as if it were one big natural park, staffed with Disney help
:-). We stayed in the rainforest at a beautiful B&B that
was surrounded by an enormous number of tropical birds &
butterflies. They would float through our bedroom at night!.
Snorkeling the reef here rivaled the Great Barrier Reef in
Australia. Food and accommodations are outstanding! I will
respond if you want more information about these places.
I will be returning
on Feb 8
after the
Carnival,
sporting new "caps and specs", and a nice tan. So, I will
see you soon. In the meantime , No worry Mon :-)
The
Innkeeper News
Great news here !!!
Rudi and Jeff (and me), have a new back-up Aspiring
Innkeeping couple, Peter and Lisa. They were taking care of
the Hummingbird Inn just down the road a piece and liked it
so much they contacted me to see if would be interested in
interning them here at the Inn. I answered with one word:
WELCOME:-)!!! I have asked them to write a little
introduction of themselves for this newsletter, but I must
tell you they are beautiful and talented people whose
mission in life is to help and make people happy and healthy
(and they can cook)! Filled with love and energy, they
compliment Jeff and Rudi so well that I may just retire to
the Attic with Audrey and have them run the place and carry
up my groceries. Better yet, I will take that cruise down
the Seine & Rhone Rivers in
France
that I had planned last year. Peter has a degree in
Archeology and Lisa is a retired RN.
What an Innkeeping staff

Jeff & Rudi's
News
While Wayne was off carousing with Island girls, Jeff and I have been keeping very busy with a
variety of projects around the Inn, such as decor changes, maintenance,
reorganizing, etc. You will have to come for a visit to see them
all!
Last week, we took some much needed time off and
went to visit my sister Roxanne and her husband, Mickey,
who live near Raleigh, NC. We finally got to meet our beautiful
little grandniece,
Maya. In this time when people are concerned with an uncertain
future, she is a precious reminder of what is truly important.
Our biggest news is that we have accepted an offer to manage another
B&B. On March 1st, we will embark on another leg of our
journey at Beach Spa Bed and Breakfast in Virginia Beach! We are
excited about this opportunity

Meet Our New Aspiring Innkeeper

Peter Phippen
Peter has had a varied career starting with a 15
year stint as an aspiring field archeologist in the Metro DC area
(graduating from American University with a BA in Anthropology
1980), Colorado, Texas, New Mexico, Alaska, where he received his
Masters Degree from the University of Alaska, Fairbanks in 1988,
New Hampshire and Maine, when he finally settled in New London, NH
and taught briefly at Colby-Sawyer College as an adjunct professor
of Anthropology.
His next career found him in the Natural Foods
industry, where for over 8 years he served as the operations
manager for the Bulk and Natural Foods departments at the Hanover
Co-op Foodstore (www.coopfoodstore.com),
in Hanover, NH nestled in the Upper Valley of the Connecticut
River, adjacent to Vermont. This work led him to his most recent
career as Founder and Program Manager of Willing Hands
Enterprises, Inc. (WHE) a fresh-food charity serving over 30
locations in the Upper Valley of Vermont and New Hampshire, where
those in need receive access to over 150 tons of produce and other
fresh foods every year (www.willinghandsinc.org).
His ministry to those in need has continued
during his time in southern Pennsylvania's Lancaster County, as
co-founder of JoyFull Ministries with his wife Lisa Fair, and the
Tree of Life program, fashioned after the WHE program, and
serviced over 15 locations for 4 months during mid-late 2007.
They have passed the Tree of Life program on to an existing area
ministry to continue, and have moved into the service/hospitality
field to try their hand at Innkeeping.
Lisa is currently caretaking a retreat center in
central Kentucky, and will be joining the Stonewall Jackson Inn
team in the near future.

Guests of the Month
Peter Ostroushko and Danny Gotham

On
February 1, we had the pleasure of hosting two great guys and
accomplished musicians, Peter Ostroushko and Danny Gotham, who
performed an amazing concert that evening at Court Square Theater.
Peter has spent more than 25 years as a frequent performer on the
popular radio show "A Prairie Home Companion", and for a few seasons,
he did a stint as Music Director. You may have caught Peter on TV,
too. He's appeared on "Austin City Limits," "Late Night with David
Letterman," and even "Mr. Rogers' Neighborhood."
He is a
multi-instrumentalist whose talents extend beyond folk and jazz, into
the world of classical music. He grew up in a Ukrainian
community in Northern Minnesota, and it is that music that often
provides the basis for his compositions.
Peter, with his wife and daughter,
resides in Minneapolis.
Originally from upstate NY,
Danny has been playing guitar for more than 30 years and teaching
since the mid 70’s! After receiving his Bachelors Degree from Saint
Lawrence University, Danny went on to complete an MA at UNC. His wide
range of experience includes recording sessions, pit orchestra work,
jazz clubs, many miles of traveling, major folk festivals, and NPR’s
‘Whaddya Know?’. In 1980, Danny took 2nd place at the National
Fingerpicking Guitar Championship. In addition to teaching guitar,
Danny instructs in mandolin and banjo. He also tutored Tom Selleck on
ukulele for Selleck’s role in the Broadway revival of “A Thousand
Clowns.”

A local newspaper ran a
competition asking for a poem with the most romantic first
line, but the least romantic second line. Here are some of the

Recipe of the Month
Mathew's Pineapple Upside Down Cake

INGREDIENTS
:
1 pound butter
2 cups granulated sugar
2 Tbsp. baking powder
9 eggs
4 oz. evaporated milk
4 oz. orange juice
Dash of almond extract
1 tsp. cinnamon
Zest of 1 orange or lime, grated
Fresh pineapple slices, half inch thick
Maraschino cherries
DIRECTIONS
:
In a large
mixing
bowl,
cream the butter and sugar until smooth with an electric mixer.
In a separate bowl, whisk the eggs and the zest until light and
fluffy; then pour the batter into the whisked eggs and mix well.
Then, slowly add and fold in one cup of sifted flour,
alternating each cup with the mixture of baking powder, orange
juice and milk, mixing each well. Lastly, fold in the cinnamon
and almond extract. Grease and flour
cake pans
and lay in pineapple slices and cherries. Pour batter in pans
and bake at 350 for 50-60 minutes or until a broom straw comes
out clean :-). Let cool for 10-12 minutes and turn the cake
out. Let cool for at least 1-2 hours.
