Welcome Simon!

Perhaps you are unaware that we are a volunteer
sponsoring host for the Virginia Council of Church's "Refugee
Resettlement Program". This program functions as a receiving
refugee agency for the US State Department.
Yesterday, Simon Otong arrived from a
Sudanese Refugee Camp after being cleared and sponsored by the
Department of State. This is the second refugee we have
sponsored in recent years. We hosted and sponsored Jean
Pierre, a refugee from Rwanda, several years ago. He spoke not
a word of English when he arrived, fleeing for his life. You
may have met him on your visit to the Inn. He studied hard and
now speaks perfect English, is Manager of our local Burger
King, and today is proudly becoming a U. S. Citizen. He is an
asset to our community, loves and is more patriotic about our
country than some natives. We are happy to have been an
enabling part of his life, fulfilling a compassionate gesture
from our government in partnership with the Virginia Council
of Church's Refugee Resettlement Program which is housed by the
local Lutheran Church.
We know very little about Simon, except he
too, arrived frightened, malnourished and with only the clothes
on his back. In general, the State Department sponsors those
individuals who have done special service for our country and
because of it, are not able to return to their home country
with their lives at risk. We will provide a family atmosphere
her for him and as he becomes more at ease and acclimated to
our culture and community, we will help him to a new and better
life here.
I hope you might have a chance to meet him
when you come as he has first hand knowledge of the tragic
situation in the Sudan. He speaks and understands English and
would be happy to talk with you. If you have questions or
would like to help or contribute to his resettlement, please
email Wayne. We will keep you posted with brief notes on
Simon's journey here with us.

Did you know?
The Pennsylvania Dutch did not originate in Holland.
The term Pennsylvania Dutch results from a mispronunciation,
misinterpretation and misspelling of the German word Deutsche, meaning
"German". The Pennsylvania Dutch are descendants of German-speaking immigrants
from Germany and Switzerland who settled in Pennsylvania during the seventeenth
and eighteenth centuries. The Pennsylvania Dutch comprise members of three
Protestant denominations, the Amish, the Mennonites, and the Moravians.

Crab and Swiss Quiche
Ingredients:
2 egg, lightly beaten
1/2 cup milk
1/2 cup mayonnaise
1 teaspoon cornstarch
1/2 pound imitation crab meat, flaked
1 1/2 cups shredded Swiss cheese
1 (9 inch) unbaked pie crust
Preparation:
1. Preheat oven to 350
degrees.
2. In a medium bowl, mix together eggs, milk, mayonnaise and
cornstarch. Mix in the imitation crab and Swiss cheese. Pour into
pie shell. Bake in preheated oven until a knife inserted into
center of the quiche comes out clean, about 30 to 40 minutes.
