March 4 - Champagne and a Play - Harrisonburg
Love Letters, presented by The Playhouse as a 2006 fundraiser for Court Square Theater, will include a champagne and dessert social from 7 to 7:45 p.m. at Court Square downtown. March 10 - Robin Hood, Irish Style - Harrisonburg
An Evening of Irish Music and Dance, from the creator of last year's Irish Dance Drama "Drowsy Maggy," will feature authentic Irish music and preview scenes from "Robin Hood," the next full-length dance drama coming in Fall 2006. The dance will begin at 8 p.m. in Court Square Theater. Advance tickets are $12 for adults and $10 for students and seniors. March 18 - Edith J. Carrier Arboretum presents Destination Helleborus by Barry Glick of Sunshine Farm and Garden - Harrisonburg
Hellebore has become the new garden "must have" plant. Lecture and slide presentation on introduction of this plant into your garden. Hellebore plants will be available for purchase. Parking available near building. Cost $15.

         Simon Says........!

 We were surprised at the the number of emails we receive after our last Newsletter informed about Simon, who is living here with us.  There were several offers of help from guests with requests to provide progress reports on his situation. As a refresher, Simon is the refugee from the Sudan who we are sponsoring, in cooperation with the Refugee Resettlement Program of the Virginia Council of Churches. Refugees come to this program on referral from the US State Department.
Simon is very happy to be here and has settled in nicely here at the Inn.  He helps us with the housekeeping and grounds in exchange living here and our care.  Simon is a neat, clean, and honest man.  He has gotten a Social Security Number and is studying for his drivers license.  The local Mennonite Church has provided him with clothes and the social worker from the Resettlement Program is assisting in obtaining health care, a part-time job, food stamps and the like, so things are moving along nicely.  He is shy as might be expected, but we are gradually putting him into social situations here at the Inn..   On your next visit, we will introduce him to you if you like, he will be happy to talk with you about himself and the situation in Sudan, which is tragic.

Did you know?

Big Ben is not the clock tower in London.
Big Ben is the name of the largest bell in the clock tower of the Houses of Parliament in London. The thirteen-ton bell, installed in 1859, was named after Sir Benjamin Hall, the commissioner of works at the time, who was tall, stout, and nicknamed Big Ben. The official name of the clock tower is the Clock Tower.

Recipe of the Month

Pan-Seared Loin of Pork with Derry Apple Relish

2-pound boneless loin of pork trimmed of excess fat and sinew
3 tablespoons unsalted butter
1 onion, diced
1/4 cup all-purpose flour, seasoned with salt and pepper
1 tablespoon safflower oil
2 Granny Smith apples, cored and sliced
1 rib celery, finely diced
1 teaspoon finely chopped sage
1/2 teaspoon chopped rosemary
1/4 teaspoon ground cinnamon
2 teaspoons orange zest
1 1/2 cups apple cider
salt and freshly ground black pepper
fresh basil leaves, for garnish

Serves 4

1. Slice pork into 8 equal pieces.
2. In a heavy-bottomed skillet, over the medium heat, melt butter. Add onion and celery, sweat, without coloring, 2 minutes. Transfer to 2-quart casserole.
3. Dust pork pieces with seasoned flour.
4. In a skillet, over high heat, sear pork pieces on the oil. Remove.
5. Arrange apples on top of onion in the casserole. Add the pork, mixed with the remaining ingredients.
6. Bring to a boil. Cover, lower heat, and simmer, 1 hour.

Presentation:
Transfer the pork, apple, and onions to a serving platter. Reduce the cooking liquid by half. Strain and pour over the pork. Garnish with fresh basil leaves.
